Healthy French Beef Salad

Ingredients:

  • 2 pieces Lean Beef Steak
  • 2 cups Mixed Salad Greens
  • 1 cup Cherry Tomatoes
  • 1 medium Cucumbers
  • 2 tbsp Red Wine Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Dijon Mustard
  • 1 Garlic clove
  • to taste Salt and Pepper

Instructions:

  1. Season the beef steaks with salt and pepper.
  2. Heat a pan over high heat, add a drizzle of olive oil and cook the steaks to your preferred doneness. Let it rest for a few minutes then slice thinly.
  3. While the steak is resting, prepare the salad. Wash and dry the mixed greens, slice the cucumber and halve the cherry tomatoes.
  4. Prepare the vinaigrette by whisking together red wine vinegar, olive oil, Dijon mustard, crushed garlic, salt and pepper.
  5. Toss together the salad greens, tomatoes, cucumber and sliced beef in a large bowl.
  6. Drizzle the vinaigrette over the salad, toss gently to combine.
  7. Serve the French Beef Salad immediately for a healthy, satisfying snack.
