Healthy French Beef Hash for Breakfast

Ingredients:

  • 1 lb Beef tenderloin
  • 2 tbsp Olive oil
  • 2 large Potatoes
  • 1 medium Onion
  • 2 - Garlic cloves
  • 2 tsp Fresh thyme
  • to taste Black Pepper
  • to taste Salt
  • 1 tbsp Fresh parsley

Instructions:

  1. Chop the beef tenderloin into small, bite-size pieces.
  2. Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the beef and cook until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tbsp of olive oil. Add the diced potatoes and cook until golden brown and crispy.
  4. Add the diced onion and minced garlic to the skillet with the potatoes. Cook until the onions are translucent.
  5. Return the cooked beef to the skillet. Add fresh thyme, black pepper, and salt to taste. Stir to combine.
  6. Cook for a further 5 minutes until all the ingredients are well combined and heated through.
  7. Before serving, garnish with freshly chopped parsley. Serve hot.
