
Healthy French Beef Hash for Breakfast

Ingredients:
- 1 lb Beef tenderloin
- 2 tbsp Olive oil
- 2 large Potatoes
- 1 medium Onion
- 2 - Garlic cloves
- 2 tsp Fresh thyme
- to taste Black Pepper
- to taste Salt
- 1 tbsp Fresh parsley
Instructions:
- Chop the beef tenderloin into small, bite-size pieces.
- Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the beef and cook until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil. Add the diced potatoes and cook until golden brown and crispy.
- Add the diced onion and minced garlic to the skillet with the potatoes. Cook until the onions are translucent.
- Return the cooked beef to the skillet. Add fresh thyme, black pepper, and salt to taste. Stir to combine.
- Cook for a further 5 minutes until all the ingredients are well combined and heated through.
- Before serving, garnish with freshly chopped parsley. Serve hot.
