Healthy French Beef Bourguignon

Ingredients:
- 2 tablespoons Olive oil
- 1.5 pounds Lean beef chuck
- 3 cups Low-sodium beef broth
- 3 medium Carrots
- 2 small Onions
- 3 cloves Garlic
- 2 tablespoons Tomato paste
- 1 teaspoon Dried thyme
- 1 Bay leaf
- 1 cup Red wine
- 1 cup Frozen peas
- to taste Salt and pepper
Instructions:
- In a large pot, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onions, carrots, and garlic. Cook until the vegetables are softened.
- Stir in the tomato paste, dried thyme, and bay leaf. Cook for another minute until the tomato paste is well combined with the vegetables.
- Pour in the red wine and scrape the bottom of the pot to release any browned bits. Allow the wine to simmer for a minute or two.
- Return the beef to the pot and add the beef broth. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 2 hours.
- Add the frozen peas in the last 10 minutes of cooking. Season the stew with salt and pepper to taste before serving.
