Healthy French Beef Bourguignon

Ingredients:

  • 2 tablespoons Olive oil
  • 1.5 pounds Lean beef chuck
  • 3 cups Low-sodium beef broth
  • 3 medium Carrots
  • 2 small Onions
  • 3 cloves Garlic
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 Bay leaf
  • 1 cup Red wine
  • 1 cup Frozen peas
  • to taste Salt and pepper

Instructions:

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the onions, carrots, and garlic. Cook until the vegetables are softened.
  3. Stir in the tomato paste, dried thyme, and bay leaf. Cook for another minute until the tomato paste is well combined with the vegetables.
  4. Pour in the red wine and scrape the bottom of the pot to release any browned bits. Allow the wine to simmer for a minute or two.
  5. Return the beef to the pot and add the beef broth. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 2 hours.
  6. Add the frozen peas in the last 10 minutes of cooking. Season the stew with salt and pepper to taste before serving.
