Healthy Egg Muffins

Ingredients:

  • 6 whole Eggs
  • 1 cup Spinach
  • 1 cup Bell peppers
  • 1 cup Cheddar cheese
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit and grease a muffin tin with a small amount of oil.
  2. Crack the eggs into a bowl and whisk them until the whites and yolks are fully combined. Season with salt and pepper.
  3. Chop the spinach and bell peppers into small pieces.
  4. Pour the whisked eggs into the muffin tin, filling each one about two-thirds of the way up.
  5. Evenly distribute the spinach, bell peppers, and cheese into each muffin slot.
  6. Bake the muffins in the oven for approximately 20 minutes, or until the tops are firm to the touch and lightly golden.
  7. Let the egg muffins cool for a few minutes before serving.
