Ingredients:
- 6 whole Eggs
- 1 cup Spinach
- 1 cup Bell peppers
- 1 cup Cheddar cheese
- 1 teaspoon Salt
- 1 teaspoon Pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit and grease a muffin tin with a small amount of oil.
- Crack the eggs into a bowl and whisk them until the whites and yolks are fully combined. Season with salt and pepper.
- Chop the spinach and bell peppers into small pieces.
- Pour the whisked eggs into the muffin tin, filling each one about two-thirds of the way up.
- Evenly distribute the spinach, bell peppers, and cheese into each muffin slot.
- Bake the muffins in the oven for approximately 20 minutes, or until the tops are firm to the touch and lightly golden.
- Let the egg muffins cool for a few minutes before serving.
