Healthy Chinese Vegetable Lo Mein

Ingredients:

  • 8 ounces whole wheat spaghetti
  • 3 tablespoons low-sodium soy sauce
  • 2 cloves garlic
  • 1 tablespoon fresh ginger
  • 2 carrot
  • 1 red bell pepper
  • 2 cups broccoli florets
  • 2 tablespoons sesame oil
  • 2 green onions

Instructions:

  1. Boil a large pot of water and cook the spaghetti according to the package directions. Drain and set aside.
  2. In a small bowl, whisk together the soy sauce, minced garlic, and grated ginger.
  3. Slice the carrots and bell pepper into thin strips. Cut the green onions into one inch pieces.
  4. Heat the sesame oil in a large skillet or wok over medium-high heat. Add the carrots, bell pepper, and broccoli and cook for 3-4 minutes, or until just tender.
  5. Add the cooked noodles and soy sauce mixture to the skillet. Toss well to combine.
  6. Cook for an additional 2-3 minutes, until everything is heated through.
