
Healthy Chinese Vegetable Lo Mein

Ingredients:
- 8 ounces whole wheat spaghetti
- 3 tablespoons low-sodium soy sauce
- 2 cloves garlic
- 1 tablespoon fresh ginger
- 2 carrot
- 1 red bell pepper
- 2 cups broccoli florets
- 2 tablespoons sesame oil
- 2 green onions
Instructions:
- Boil a large pot of water and cook the spaghetti according to the package directions. Drain and set aside.
- In a small bowl, whisk together the soy sauce, minced garlic, and grated ginger.
- Slice the carrots and bell pepper into thin strips. Cut the green onions into one inch pieces.
- Heat the sesame oil in a large skillet or wok over medium-high heat. Add the carrots, bell pepper, and broccoli and cook for 3-4 minutes, or until just tender.
- Add the cooked noodles and soy sauce mixture to the skillet. Toss well to combine.
- Cook for an additional 2-3 minutes, until everything is heated through.
