Healthy Chinese Vegetable Fried Rice

Ingredients:

  • 2 cups Rice
  • 2 Tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 Medium size Onion
  • 1 Cup Bell Peppers
  • 0.5 Cup Carrots
  • 1 Cup Green Peas
  • 2 Egg
  • 2 Tablespoons Low Sodium Soy Sauce
  • 1 Teaspoon Sesame Oil

Instructions:

  1. Cook rice according to instructions on package.
  2. While rice is cooking, chop all the vegetables.
  3. Heat 1 tablespoon of olive oil in a wok or large pan, stir in minced garlic and chopped onion. Fry until onion is transparent.
  4. Add bell peppers, carrots, and peas to the pan with the garlic and onions. Stir fry until vegetables are tender.
  5. Push vegetables to one side of the wok. Add the rest of the oil to the other side and crack eggs into it. Scramble eggs for a couple of minutes until they’re fully cooked.
  6. Add rice to the pan along with cooked vegetables and eggs. Stir everything together.
  7. Pour soy sauce and sesame oil over the rice and vegetables. Stir until everything is evenly coated.
  8. Serve hot, enjoy your Healthy Chinese Vegetable Fried Rice!
