
Healthy Chinese Vegetable Fried Rice

Ingredients:
- 2 cups Rice
- 2 Tablespoons Olive Oil
- 2 cloves Garlic
- 1 Medium size Onion
- 1 Cup Bell Peppers
- 0.5 Cup Carrots
- 1 Cup Green Peas
- 2 Egg
- 2 Tablespoons Low Sodium Soy Sauce
- 1 Teaspoon Sesame Oil
Instructions:
- Cook rice according to instructions on package.
- While rice is cooking, chop all the vegetables.
- Heat 1 tablespoon of olive oil in a wok or large pan, stir in minced garlic and chopped onion. Fry until onion is transparent.
- Add bell peppers, carrots, and peas to the pan with the garlic and onions. Stir fry until vegetables are tender.
- Push vegetables to one side of the wok. Add the rest of the oil to the other side and crack eggs into it. Scramble eggs for a couple of minutes until they’re fully cooked.
- Add rice to the pan along with cooked vegetables and eggs. Stir everything together.
- Pour soy sauce and sesame oil over the rice and vegetables. Stir until everything is evenly coated.
