
Healthy Chinese-style Beef Stir Fry

Ingredients:
- 200 grams Lean beef steak
- 2 whole Garlic cloves
- 1 inch piece Ginger
- 1 cup Mixed bell peppers
- 1 cup Broccoli florets
- 2 tablespoons Low-sodium soy sauce
- 1 tablespoon Sesame oil
- 1 teaspoon Cornstarch
- 1 cup Brown rice
Instructions:
- Prepare the rice according to the package instructions.
- While rice is cooking, slice beef into thin strips.
- In a wok or large frying pan, heat the sesame oil over a medium heat.
- Add the sliced beef, chopped garlic and ginger, stirring constantly for 3-4 minutes or until the beef is browned.
- Add the mixed bell peppers and broccoli to the pan and stir fry for a further 5 minutes, adding a splash of water if required.
- In a small bowl, mix the soy sauce and cornstarch until smooth. Pour the sauce over the stir fry and toss to coat all the ingredients.
- Serve the stir fry over the warm brown rice.
