Healthy Chinese-style Beef Stir Fry

Ingredients:

  • 200 grams Lean beef steak
  • 2 whole Garlic cloves
  • 1 inch piece Ginger
  • 1 cup Mixed bell peppers
  • 1 cup Broccoli florets
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Cornstarch
  • 1 cup Brown rice

Instructions:

  1. Prepare the rice according to the package instructions.
  2. While rice is cooking, slice beef into thin strips.
  3. In a wok or large frying pan, heat the sesame oil over a medium heat.
  4. Add the sliced beef, chopped garlic and ginger, stirring constantly for 3-4 minutes or until the beef is browned.
  5. Add the mixed bell peppers and broccoli to the pan and stir fry for a further 5 minutes, adding a splash of water if required.
  6. In a small bowl, mix the soy sauce and cornstarch until smooth. Pour the sauce over the stir fry and toss to coat all the ingredients.
  7. Serve the stir fry over the warm brown rice.
