
Healthy Chinese Spring Rolls

Ingredients:
- 12 pieces Spring Roll Wrappers
- 2 cups Shredded Cabbage
- 1 cup Thinly Sliced Carrots
- 1 cup Thinly Sliced Bell Peppers
- 1 bunch Chopped Green Onions
- 2 cloves Minced Garlic
- 1 tablespoon Minced Ginger
- 2 tablespoons Vegetable Oil
- 2 tablespoons Soy Sauce
- 1 tablespoon Cornstarch
- 2 tablespoons Water
Instructions:
- Heat 1 tablespoon of oil in a pan over medium heat.
- Add in the minced garlic, ginger and sauté until aromatic.
- Add in the thinly sliced carrots and bell peppers. Stir fry until they are tender.
- Add in the shredded cabbage and green onions. Sauté until the cabbage is wilted.
- Stir in the soy sauce. Cook for another two minutes, then remove the pan from heat. Allow it to cool.
- Mix the cornstarch and water in a small bowl to make a slurry. This will be used to seal the spring roll wrappers
- Lay out a spring roll wrapper, place two tablespoons of the cooled mixture onto the wrapper, fold the sides in and roll it tightly. Use the cornstarch slurry to seal it.
- Repeat until all the mixture is used.
- Place a pan over medium heat, add the remaining tablespoon of oil. When the oil is hot, add the spring rolls. Cook them until they are golden brown on all sides.
- Serve hot with some dipping sauce.
