Healthy Chinese Spring Rolls

Ingredients:

  • 12 pieces Spring Roll Wrappers
  • 2 cups Shredded Cabbage
  • 1 cup Thinly Sliced Carrots
  • 1 cup Thinly Sliced Bell Peppers
  • 1 bunch Chopped Green Onions
  • 2 cloves Minced Garlic
  • 1 tablespoon Minced Ginger
  • 2 tablespoons Vegetable Oil
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Instructions:

  1. Heat 1 tablespoon of oil in a pan over medium heat.
  2. Add in the minced garlic, ginger and sauté until aromatic.
  3. Add in the thinly sliced carrots and bell peppers. Stir fry until they are tender.
  4. Add in the shredded cabbage and green onions. Sauté until the cabbage is wilted.
  5. Stir in the soy sauce. Cook for another two minutes, then remove the pan from heat. Allow it to cool.
  6. Mix the cornstarch and water in a small bowl to make a slurry. This will be used to seal the spring roll wrappers
  7. Lay out a spring roll wrapper, place two tablespoons of the cooled mixture onto the wrapper, fold the sides in and roll it tightly. Use the cornstarch slurry to seal it.
  8. Repeat until all the mixture is used.
  9. Place a pan over medium heat, add the remaining tablespoon of oil. When the oil is hot, add the spring rolls. Cook them until they are golden brown on all sides.
  10. Serve hot with some dipping sauce.
