Healthy Chinese Seafood Stir-fry

Ingredients:

  • 1 pound Shrimp
  • 1 cup Scallops
  • 1 cup Red bell pepper
  • 1 cup Yellow bell pepper
  • 1 cup Broccoli florets
  • 1 clove Garlic
  • 1 tablespoon Fresh ginger
  • 2 tablespoons Light soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Cornstarch
  • 2 tablespoons Canola oil

Instructions:

  1. In a bowl, combine soy sauce, oyster sauce and cornstarch. Add the shrimp and scallops and toss to coat.
  2. Heat the oil in a large skillet or wok over high heat. Add the garlic and ginger and sauté until fragrant.
  3. Add the broccoli and bell peppers and stir-fry for about 3 minutes.
  4. Add the marinated seafood and the sauce to the pan and stir-fry for about 2-3 minutes, until the seafood is just cooked through.
  5. Serve the stir-fry over cooked brown rice or quinoa for a complete meal.
