Healthy Chinese Rice Snack

Ingredients:

  • 1 cup Brown Rice
  • 2 cups Water
  • 1 tablespoon Vegetable Oil
  • 1 cup Mixed Vegetables (carrots, peas, corn)
  • 2 tablespoons Low-sodium Soy Sauce
  • 2 sprigs Scallions (chopped)

Instructions:

  1. First, rinse the brown rice under cold water until the water runs clear.
  2. In a pot, add the rinsed rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover and let it simmer for about 20 minutes, or until the rice is cooked.
  3. In a large pan, heat the oil over medium heat. Add the mixed vegetables and stir-fry for about 5 minutes.
  4. Add the cooked rice to the pan with the vegetables and mix well. Then, add the soy sauce and continue to stir-fry for another 2-3 minutes.
  5. Serve the rice hot, garnished with the chopped scallions. Enjoy your healthy Chinese rice snack!
