
Healthy Chinese Pasta Stir Fry

Ingredients:
- 200 grams whole wheat spaghetti
- 2 tablespoons extra light olive oil
- 3 cloves, minced garlic
- 2 inches, grated fresh ginger root
- 3 medium size, sliced mixed bell peppers
- 1 cup snow peas
- 1 medium size, sliced red onion
- 3 tablespoons low sodium soy sauce
- 2 tablespoons hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon crushed red pepper flakes
Instructions:
- Cook the whole wheat spaghetti according to the package instructions. Drain and set aside.
- Heat the extra light olive oil in a large wok or skillet over medium-high heat. Add the garlic and ginger root and cook for 1-2 minutes until fragrant.
- Add the bell peppers, snow peas, and red onion to the wok. Stir fry for 5-7 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, and crushed red pepper flakes. Pour the sauce over the vegetables in the wok and stir well to combine.
- Add the cooked spaghetti to the wok and toss well to combine with the vegetables and sauce. Cook for another 2-3 minutes until everything is well combined and heated through.
