Healthy Chinese Pasta Stir Fry

Ingredients:

  • 200 grams whole wheat spaghetti
  • 2 tablespoons extra light olive oil
  • 3 cloves, minced garlic
  • 2 inches, grated fresh ginger root
  • 3 medium size, sliced mixed bell peppers
  • 1 cup snow peas
  • 1 medium size, sliced red onion
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon crushed red pepper flakes

Instructions:

  1. Cook the whole wheat spaghetti according to the package instructions. Drain and set aside.
  2. Heat the extra light olive oil in a large wok or skillet over medium-high heat. Add the garlic and ginger root and cook for 1-2 minutes until fragrant.
  3. Add the bell peppers, snow peas, and red onion to the wok. Stir fry for 5-7 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, and crushed red pepper flakes. Pour the sauce over the vegetables in the wok and stir well to combine.
  5. Add the cooked spaghetti to the wok and toss well to combine with the vegetables and sauce. Cook for another 2-3 minutes until everything is well combined and heated through.
  6. Serve the stir fry hot with a sprinkle of sesame seeds on top, if desired. Enjoy your healthy Chinese pasta stir fry!
