Healthy Chinese Lemon Chicken

Ingredients:

  • 4 pieces boneless chicken breasts
  • 3 cloves garlic
  • 1 inch ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 lemon lemon juice
  • 3 stalks green onions
  • 1.5 tablespoons cornstarch
  • 2 tablespoons water
  • 1 teaspoon sesame seeds
  • 1 tablespoon vegetable oil
  • salt & pepper to taste

Instructions:

  1. Cut the chicken into bite-sized pieces and season with salt and pepper.
  2. Heat the oil in a large pan or wok over medium heat.
  3. Add the chicken to the pan and cook until golden brown and cooked through.
  4. In a small bowl, mix together the crushed garlic, grated ginger, soy sauce, lemon juice, honey and a portion of the green onions.
  5. In a separate bowl, mix the cornstarch with water to form a slurry.
  6. Pour the sauce over the cooked chicken and stir well.
  7. Add the cornstarch slurry to the pan and stir until the sauce has thickened.
  8. Garnish with sesame seeds and the remaining green onions before serving.
