Healthy Chinese Egg Fried Rice

Ingredients:

  • 2 cups Long Grain Rice
  • 4 Eggs
  • 2 tablespoons Vegetable Oil
  • 2 Carrots
  • 1 cup Frozen peas
  • 2 tablespoons Soy Sauce
  • 2 cloves Garlic
  • 2 Green onions

Instructions:

  1. Cook rice according to package instructions. Set aside.
  2. Crack the eggs into a small bowl and beat them together.
  3. Heat half the oil in a large wok or skillet over medium-high heat. Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
  4. Heat the remaining oil in the pan. Add the carrots and cook for 3-4 minutes until tender. Add the garlic and cook for another minute.
  5. Stir in the peas, cooked rice, and cooked eggs. Pour the soy sauce over the top and stir to combine.
  6. Cook for another 2-3 minutes until heated through. Stir in the green onions, serve and enjoy!
