
Healthy Chinese Egg Fried Rice

Ingredients:
- 2 cups Long Grain Rice
- 4 Eggs
- 2 tablespoons Vegetable Oil
- 2 Carrots
- 1 cup Frozen peas
- 2 tablespoons Soy Sauce
- 2 cloves Garlic
- 2 Green onions
Instructions:
- Cook rice according to package instructions. Set aside.
- Crack the eggs into a small bowl and beat them together.
- Heat half the oil in a large wok or skillet over medium-high heat. Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
- Heat the remaining oil in the pan. Add the carrots and cook for 3-4 minutes until tender. Add the garlic and cook for another minute.
- Stir in the peas, cooked rice, and cooked eggs. Pour the soy sauce over the top and stir to combine.
- Cook for another 2-3 minutes until heated through. Stir in the green onions, serve and enjoy!
