Healthy Chinese Congee for Breakfast

Ingredients:

  • 1 cup rice
  • 8 cups water
  • 1 slice ginger
  • 4 cups chicken stock
  • 2 pieces chicken breast
  • 2 stalks green onions
  • 1 tsp salt
  • 1 sprig cilantro
  • 1 cup Washed and sliced mushrooms

Instructions:

  1. First, rinse the rice under cold water until the water runs clear. This removes the excess starch and helps the congee to have a cleaner flavor.
  2. Add the rinsed rice, water, ginger, and chicken stock to a large pot.
  3. Bring to a boil over high heat. Once boiling, lower the heat to a simmer and cover the pot. Allow the congee to cook for about 1 hour, or until it reaches your desired consistency.
  4. While the congee is cooking, prepare the chicken. Cook the chicken breasts in a separate pan until they are cooked through, then shred them and set aside.
  5. Slice the green onions and set them aside as well.
  6. Once the congee has reached your desired consistency, add in the shredded chicken and sliced mushrooms, then allow it to cook for another 10-15 minutes.
  7. Before serving, stir in the sliced green onions and salt to taste.
  8. Serve the congee hot, topped with a sprig of fresh cilantro for garnish.
