
Healthy Chinese Congee for Breakfast

Ingredients:
- 1 cup rice
- 8 cups water
- 1 slice ginger
- 4 cups chicken stock
- 2 pieces chicken breast
- 2 stalks green onions
- 1 tsp salt
- 1 sprig cilantro
- 1 cup Washed and sliced mushrooms
Instructions:
- First, rinse the rice under cold water until the water runs clear. This removes the excess starch and helps the congee to have a cleaner flavor.
- Add the rinsed rice, water, ginger, and chicken stock to a large pot.
- Bring to a boil over high heat. Once boiling, lower the heat to a simmer and cover the pot. Allow the congee to cook for about 1 hour, or until it reaches your desired consistency.
- While the congee is cooking, prepare the chicken. Cook the chicken breasts in a separate pan until they are cooked through, then shred them and set aside.
- Slice the green onions and set them aside as well.
- Once the congee has reached your desired consistency, add in the shredded chicken and sliced mushrooms, then allow it to cook for another 10-15 minutes.
- Before serving, stir in the sliced green onions and salt to taste.
- Serve the congee hot, topped with a sprig of fresh cilantro for garnish.
