Healthy Chinese Chicken Stir Fry

Ingredients:

  • 2 pieces Boneless, skinless chicken breasts
  • 2 cups Mixed vegetables (e.g. bell pepper, snap peas, broccoli)
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 3 tablespoons Low-sodium soy sauce
  • 1 tablespoon Sesame oil
  • 1 tablespoon Olive oil
  • 1 cup Brown rice

Instructions:

  1. Prepare the brown rice according to its package instructions and set aside.
  2. Heat the olive oil in a skillet over medium heat.
  3. Add the chicken to the skillet and cook until browned and cooked through. Remove and set aside.
  4. In the same skillet, add the garlic and ginger and stir for 1 minute until fragrant.
  5. Add the mixed vegetables and stir-fry until they are tender-crisp.
  6. Add the chicken back into the skillet. Add the soy sauce and stir to combine.
  7. Drizzle with sesame oil and heat through.
  8. Serve the stir-fry hot over the cooked brown rice.
