
Healthy Chinese Chicken Stir Fry

Ingredients:
- 2 pieces Boneless, skinless chicken breasts
- 2 cups Mixed vegetables (e.g. bell pepper, snap peas, broccoli)
- 2 cloves Garlic
- 1 inch piece Ginger
- 3 tablespoons Low-sodium soy sauce
- 1 tablespoon Sesame oil
- 1 tablespoon Olive oil
- 1 cup Brown rice
Instructions:
- Prepare the brown rice according to its package instructions and set aside.
- Heat the olive oil in a skillet over medium heat.
- Add the chicken to the skillet and cook until browned and cooked through. Remove and set aside.
- In the same skillet, add the garlic and ginger and stir for 1 minute until fragrant.
- Add the mixed vegetables and stir-fry until they are tender-crisp.
- Add the chicken back into the skillet. Add the soy sauce and stir to combine.
- Drizzle with sesame oil and heat through.
- Serve the stir-fry hot over the cooked brown rice.
