
Healthy Chinese Chicken Lettuce Wraps

Ingredients:
- 2 pieces Boneless, skinless chicken breasts
- 8 pieces Romaine lettuce leaves
- 3 pieces Scallions
- 1 inch piece Fresh ginger
- 2 pieces Garlic cloves
- 2 tablespoons Low sodium soy sauce
- 1 tablespoon Sesame oil
- 1/4 teaspoon Red pepper flakes
- 1/4 cup Chopped peanuts
Instructions:
- Chop the chicken into small pieces.
- Mince the scallions, ginger, and garlic.
- In a pan, heat the sesame oil over medium heat.
- Add the minced ginger and garlic, cook for about 1 minute.
- Add the chopped chicken to the pan, cook until it's no longer pink.
- Add the soy sauce and red pepper flakes, stir well to coat the chicken.
- Cook for another 2-3 minutes, then remove from heat.
- Spoon the chicken mixture onto the lettuce leaves, garnish with chopped scallions and peanuts.
- Serve the wraps as a healthy snack.
