Healthy Chinese Chicken Lettuce Wraps

Ingredients:

  • 2 pieces Boneless, skinless chicken breasts
  • 8 pieces Romaine lettuce leaves
  • 3 pieces Scallions
  • 1 inch piece Fresh ginger
  • 2 pieces Garlic cloves
  • 2 tablespoons Low sodium soy sauce
  • 1 tablespoon Sesame oil
  • 1/4 teaspoon Red pepper flakes
  • 1/4 cup Chopped peanuts

Instructions:

  1. Chop the chicken into small pieces.
  2. Mince the scallions, ginger, and garlic.
  3. In a pan, heat the sesame oil over medium heat.
  4. Add the minced ginger and garlic, cook for about 1 minute.
  5. Add the chopped chicken to the pan, cook until it's no longer pink.
  6. Add the soy sauce and red pepper flakes, stir well to coat the chicken.
  7. Cook for another 2-3 minutes, then remove from heat.
  8. Spoon the chicken mixture onto the lettuce leaves, garnish with chopped scallions and peanuts.
  9. Serve the wraps as a healthy snack.
