
Healthy Chinese Breakfast Noodles

Ingredients:
- 200 grams Whole wheat noodles
- 2 tablespoons Low sodium soy sauce
- 2 teaspoons Sesame oil
- 2 cloves Garlic
- 2 stalks Spring onions
- 1 medium-sized Carrot
- 1 medium-sized Bell pepper
- 2 Eggs
- Salt and pepper to taste
Instructions:
- Cook the whole wheat noodles according to package instructions, then set aside.
- In a large skillet, heat the sesame oil over medium heat.
- Add the finely chopped garlic and cook for a minute.
- Add the sliced spring onions (saving some for garnish), grated carrot, and sliced bell pepper to the skillet and stir-fry for 3-5 minutes until the vegetables are tender.
- In a separate pan, scramble the eggs and cook thoroughly.
- Add the cooked noodles to the skillet with vegetables, then add the cooked eggs.
- Pour the soy sauce over the noodles, eggs and vegetables, and stir to combine all the ingredients.
- Season with salt and pepper to taste.
- Serve the noodles hot, garnished with the remaining spring onions. Enjoy your healthy Chinese breakfast!
