Healthy Chinese Breakfast Noodles

Ingredients:

  • 200 grams Whole wheat noodles
  • 2 tablespoons Low sodium soy sauce
  • 2 teaspoons Sesame oil
  • 2 cloves Garlic
  • 2 stalks Spring onions
  • 1 medium-sized Carrot
  • 1 medium-sized Bell pepper
  • 2 Eggs
  • Salt and pepper to taste

Instructions:

  1. Cook the whole wheat noodles according to package instructions, then set aside.
  2. In a large skillet, heat the sesame oil over medium heat.
  3. Add the finely chopped garlic and cook for a minute.
  4. Add the sliced spring onions (saving some for garnish), grated carrot, and sliced bell pepper to the skillet and stir-fry for 3-5 minutes until the vegetables are tender.
  5. In a separate pan, scramble the eggs and cook thoroughly.
  6. Add the cooked noodles to the skillet with vegetables, then add the cooked eggs.
  7. Pour the soy sauce over the noodles, eggs and vegetables, and stir to combine all the ingredients.
  8. Season with salt and pepper to taste.
  9. Serve the noodles hot, garnished with the remaining spring onions. Enjoy your healthy Chinese breakfast!
