
Healthy Chinese Beef Stir-Fry

Ingredients:
- 500 grams Lean beef
- 2 cups Brown rice
- 3 tablespoons Soy sauce
- 2 tablespoons Hoisen sauce
- 4 Garlic cloves
- 1 inch piece Ginger
- 4 cups Mixed vegetables (carrots, red bell peppers, snow peas)
- 2 tablespoons Olive oil
Instructions:
- Slice the beef into thin strips.
- Cook the brown rice according to the packet instructions.
- Mince the garlic and grate the ginger.
- In a large wok or frying pan, heat the olive oil over medium heat.
- Add the beef, garlic, and ginger to the pan and cook for about 5 minutes, or until the beef is browned.
- Add the mixed vegetables and cook for another 5 minutes, or until the vegetables are tender.
- In a small bowl, mix together the soy sauce and hoisin sauce.
- Pour the sauce over the stir-fry, and stir well to combine.
- Serve the stir-fry over the cooked rice.
