Healthy Chinese Beef Stir-Fry

Ingredients:

  • 500 grams Lean beef
  • 2 cups Brown rice
  • 3 tablespoons Soy sauce
  • 2 tablespoons Hoisen sauce
  • 4 Garlic cloves
  • 1 inch piece Ginger
  • 4 cups Mixed vegetables (carrots, red bell peppers, snow peas)
  • 2 tablespoons Olive oil

Instructions:

  1. Slice the beef into thin strips.
  2. Cook the brown rice according to the packet instructions.
  3. Mince the garlic and grate the ginger.
  4. In a large wok or frying pan, heat the olive oil over medium heat.
  5. Add the beef, garlic, and ginger to the pan and cook for about 5 minutes, or until the beef is browned.
  6. Add the mixed vegetables and cook for another 5 minutes, or until the vegetables are tender.
  7. In a small bowl, mix together the soy sauce and hoisin sauce.
  8. Pour the sauce over the stir-fry, and stir well to combine.
  9. Serve the stir-fry over the cooked rice.
