
Healthy Chicken Salad

Ingredients:
- 2 pieces Boneless chicken breast
- 1 head Romaine lettuce
- 1 cup Cherry tomatoes
- 1 piece Avocado
- 0.5 piece Red onion
- 1 tablespoon Olive oil
- 2 tablespoons Lemon juice
- To taste Salt
- To taste Black pepper
Instructions:
- Preheat grill or pan over medium heat.
- Rub chicken breasts with olive oil and season with salt and pepper. Cook on the grill or in the pan for about 12-15 minutes per side, until no longer pink and juices run clear. Let the chicken rest for a few minutes and then slice it.
- In a large bowl, add the chopped romaine lettuce, sliced chicken, halved cherry tomatoes, diced avocado, and thinly sliced red onion.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to create the dressing. Drizzle over the salad ingredients.
- Toss everything together until well coated in the dressing. Adjust the seasoning if needed.
- Serve the salad immediately for a healthy and satisfying lunch.
