Healthy Chicken Salad

Ingredients:

  • 2 pieces Boneless chicken breast
  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 piece Avocado
  • 0.5 piece Red onion
  • 1 tablespoon Olive oil
  • 2 tablespoons Lemon juice
  • To taste Salt
  • To taste Black pepper

Instructions:

  1. Preheat grill or pan over medium heat.
  2. Rub chicken breasts with olive oil and season with salt and pepper. Cook on the grill or in the pan for about 12-15 minutes per side, until no longer pink and juices run clear. Let the chicken rest for a few minutes and then slice it.
  3. In a large bowl, add the chopped romaine lettuce, sliced chicken, halved cherry tomatoes, diced avocado, and thinly sliced red onion.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to create the dressing. Drizzle over the salad ingredients.
  5. Toss everything together until well coated in the dressing. Adjust the seasoning if needed.
  6. Serve the salad immediately for a healthy and satisfying lunch.
