
Healthy Berry Banana Breakfast Quinoa

Ingredients:
- 1 cup Quinoa
- 2 cups Water
- 2 tablespoons Honey
- 1 cup Berries
- 2 Bananas, sliced
- 1 cup Greek yogurt
- 1/4 cup Almond slices
Instructions:
- Rinse quinoa under cold water until water runs clear.
- Place quinoa and water in a saucepan, bring to a boil, then reduce to a simmer, cover and cook for 15 minutes or until all water is absorbed.
- Remove from heat and let sit for 5 minutes, then fluff with fork.
- Stir in honey and let quinoa cool to room temperature.
- Once cool, layer quinoa in a serving glass with Greek yogurt, berries and bananas.
- Top with almond slices.
- Serve immediately, or refrigerate overnight for a nutritious breakfast ready to go in the morning.
