Healthy Berry Banana Breakfast Quinoa

Ingredients:

  • 1 cup Quinoa
  • 2 cups Water
  • 2 tablespoons Honey
  • 1 cup Berries
  • 2 Bananas, sliced
  • 1 cup Greek yogurt
  • 1/4 cup Almond slices

Instructions:

  1. Rinse quinoa under cold water until water runs clear.
  2. Place quinoa and water in a saucepan, bring to a boil, then reduce to a simmer, cover and cook for 15 minutes or until all water is absorbed.
  3. Remove from heat and let sit for 5 minutes, then fluff with fork.
  4. Stir in honey and let quinoa cool to room temperature.
  5. Once cool, layer quinoa in a serving glass with Greek yogurt, berries and bananas.
  6. Top with almond slices.
  7. Serve immediately, or refrigerate overnight for a nutritious breakfast ready to go in the morning.
