
Healthy Beef Stir Fry

Ingredients:
- 1 lb Lean beef
- 4 cups Mixed vegetables (carrots, bell peppers, broccoli)
- 2 cloves Garlic
- 4 tablespoons Low-sodium soy sauce
- 2 cups cooked Brown rice
- 2 tablespoons Olive oil
- to taste Ground black pepper
Instructions:
- Prepare all the ingredients. Slice the lean beef into thin strips. Mince the garlic. Cut the vegetables into bite-sized pieces.
- In a large pan or wok, heat up the olive oil. Add in the garlic and stir until fragrant.
- Add in the lean beef strips. Cook until they are browned and no longer pink.
- Add in the mixed vegetables. Stir fry everything together until the vegetables are tender but still crisp.
- Pour in the low-sodium soy sauce. Stir everything well to evenly distribute the sauce. Add pepper to taste.
- Serve the stir fry over the cooked brown rice. Enjoy your healthy and delicious snack!
