Healthy Beef Stir Fry

Ingredients:

  • 1 lb Lean beef
  • 4 cups Mixed vegetables (carrots, bell peppers, broccoli)
  • 2 cloves Garlic
  • 4 tablespoons Low-sodium soy sauce
  • 2 cups cooked Brown rice
  • 2 tablespoons Olive oil
  • to taste Ground black pepper

Instructions:

  1. Prepare all the ingredients. Slice the lean beef into thin strips. Mince the garlic. Cut the vegetables into bite-sized pieces.
  2. In a large pan or wok, heat up the olive oil. Add in the garlic and stir until fragrant.
  3. Add in the lean beef strips. Cook until they are browned and no longer pink.
  4. Add in the mixed vegetables. Stir fry everything together until the vegetables are tender but still crisp.
  5. Pour in the low-sodium soy sauce. Stir everything well to evenly distribute the sauce. Add pepper to taste.
  6. Serve the stir fry over the cooked brown rice. Enjoy your healthy and delicious snack!
