
Healthy American Shrimp and Grits

Ingredients:
- 1 pound shrimp
- 2 tablespoons extra-virgin olive oil
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 2 garlic cloves
- 3 cups water
- 1 cup milk
- 1 cup grits
- 1 cup grated low-fat cheddar cheese
- to taste salt and pepper
Instructions:
- In a large skillet, heat the olive oil over medium heat. Add the bell peppers, onion, and garlic, and sauté until softened.
- Add the shrimp to the skillet and cook until they turn pink on both sides. Remove the skillet from heat and set aside.
- In a saucepan, bring the water and milk to a boil. Stir in the grits, reduce heat to low, cover, and simmer for about 20 minutes, or until the grits are thickened, stirring occasionally.
- Stir in the cheese and season with salt and pepper.
- Serve the grits in bowls, topped with the shrimp and vegetables.
