Healthy American Shrimp and Grits

Ingredients:

  • 1 pound shrimp
  • 2 tablespoons extra-virgin olive oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 2 garlic cloves
  • 3 cups water
  • 1 cup milk
  • 1 cup grits
  • 1 cup grated low-fat cheddar cheese
  • to taste salt and pepper

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the bell peppers, onion, and garlic, and sauté until softened.
  2. Add the shrimp to the skillet and cook until they turn pink on both sides. Remove the skillet from heat and set aside.
  3. In a saucepan, bring the water and milk to a boil. Stir in the grits, reduce heat to low, cover, and simmer for about 20 minutes, or until the grits are thickened, stirring occasionally.
  4. Stir in the cheese and season with salt and pepper.
  5. Serve the grits in bowls, topped with the shrimp and vegetables.
