Healthy American Rice Skillet

Ingredients:

  • 2 tbsp olive oil
  • 1 medium, chopped onion
  • 2 minced garlic cloves
  • 1 large, diced bell pepper
  • 1 cup brown rice
  • 2 cups chicken broth
  • 1 14.5 oz can diced tomatoes
  • 1 cup corn kernels
  • 1 can, drained and rinsed black beans
  • 1 cup shredded chicken
  • to taste (Salt, pepper, cumin, chili powder, oregano) spices
  • 1 cup, shredded cheddar cheese

Instructions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onions and cook until softened.
  3. Add garlic and bell pepper, stirring until fragrant.
  4. Put in the brown rice and stir to coat with oil.
  5. Pour in chicken broth and diced tomatoes, bring to a simmer over medium-high heat.
  6. Reduce the heat to low, cover and simmer for approximately 20 minutes or until the rice is cooked, stirring occasionally.
  7. Add the corn, black beans, and shredded chicken into the skillet, stirring until everything is fully incorporated and heated through.
  8. Season with spices to taste.
  9. Sprinkle with shredded cheese, then cover and let sit for about 5 minutes or until cheese has melted.
  10. Serve piping hot. Enjoy your delicious and healthy American Rice skillet!
