
Healthy American Rice Skillet

Ingredients:
- 2 tbsp olive oil
- 1 medium, chopped onion
- 2 minced garlic cloves
- 1 large, diced bell pepper
- 1 cup brown rice
- 2 cups chicken broth
- 1 14.5 oz can diced tomatoes
- 1 cup corn kernels
- 1 can, drained and rinsed black beans
- 1 cup shredded chicken
- to taste (Salt, pepper, cumin, chili powder, oregano) spices
- 1 cup, shredded cheddar cheese
Instructions:
- In a large skillet, heat olive oil over medium heat.
- Add onions and cook until softened.
- Add garlic and bell pepper, stirring until fragrant.
- Put in the brown rice and stir to coat with oil.
- Pour in chicken broth and diced tomatoes, bring to a simmer over medium-high heat.
- Reduce the heat to low, cover and simmer for approximately 20 minutes or until the rice is cooked, stirring occasionally.
- Add the corn, black beans, and shredded chicken into the skillet, stirring until everything is fully incorporated and heated through.
- Season with spices to taste.
- Sprinkle with shredded cheese, then cover and let sit for about 5 minutes or until cheese has melted.
