Healthy American Rice Bowl

Ingredients:

  • 1 cup Brown rice
  • 2 cups Water
  • 2 pieces Boneless skinless chicken breast
  • 2 tablespoons Olive oil
  • to taste Salt and pepper
  • 2 cups Mixed vegetables (carrots, peas, corn)
  • 2 tablespoons Low-sodium soy sauce

Instructions:

  1. Place the brown rice and water in a medium saucepan, and bring to a boil. Reduce heat, cover, and cook for 45 minutes, or until rice is tender and water has been absorbed.
  2. While the rice is cooking, heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, and cook until no longer pink in the middle, about 10-12 minutes each side. Once cooked, remove from heat and let it cool before cutting into bite-size pieces.
  3. In the same skillet, add mixed vegetables and cook until they are softened and golden. Add the soy sauce and stir to combine.
  4. Fluff the cooked rice with a fork and divide among 4 bowls. Top with cooked chicken and vegetables, drizzle with extra soy sauce if desired, and serve.
