
Healthy American Rice Bowl

Ingredients:
- 1 cup Brown rice
- 2 cups Water
- 2 pieces Boneless skinless chicken breast
- 2 tablespoons Olive oil
- to taste Salt and pepper
- 2 cups Mixed vegetables (carrots, peas, corn)
- 2 tablespoons Low-sodium soy sauce
Instructions:
- Place the brown rice and water in a medium saucepan, and bring to a boil. Reduce heat, cover, and cook for 45 minutes, or until rice is tender and water has been absorbed.
- While the rice is cooking, heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, and cook until no longer pink in the middle, about 10-12 minutes each side. Once cooked, remove from heat and let it cool before cutting into bite-size pieces.
- In the same skillet, add mixed vegetables and cook until they are softened and golden. Add the soy sauce and stir to combine.
- Fluff the cooked rice with a fork and divide among 4 bowls. Top with cooked chicken and vegetables, drizzle with extra soy sauce if desired, and serve.
