
Healthy American Rice Balls

Ingredients:
- 1 cup White Rice
- 2 cups Water
- 1 cup Low Sodium Chicken Broth
- 1 medium Grated Carrot
- 1 cup Peas
- 2 cups Water
- 2 tablespoons Olive Oil
- to taste Salt
- to taste Black Pepper
Instructions:
- Rinse the rice several times until the water runs clear. Drain and set aside.
- In a medium saucepan, bring 2 cups of water to a boil. Once boiling, add the rice and reduce heat to low, cover, and let sit for about 15 to 20 minutes until rice is cooked and water is absorbed.
- In a separate pan, heat the olive oil over medium heat. Add grated carrot and peas, season with salt and pepper, and saute for about 5 minutes.
- Fluff the cooked rice with a fork and combine with the sauteed vegetables.
- Using wet hands or a rice ball mold, shape the rice into small balls - great for snacking!
