Healthy American Rice Balls

Ingredients:

  • 1 cup White Rice
  • 2 cups Water
  • 1 cup Low Sodium Chicken Broth
  • 1 medium Grated Carrot
  • 1 cup Peas
  • 2 cups Water
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Rinse the rice several times until the water runs clear. Drain and set aside.
  2. In a medium saucepan, bring 2 cups of water to a boil. Once boiling, add the rice and reduce heat to low, cover, and let sit for about 15 to 20 minutes until rice is cooked and water is absorbed.
  3. In a separate pan, heat the olive oil over medium heat. Add grated carrot and peas, season with salt and pepper, and saute for about 5 minutes.
  4. Fluff the cooked rice with a fork and combine with the sauteed vegetables.
  5. Using wet hands or a rice ball mold, shape the rice into small balls - great for snacking!
