Healthy American Pork Tenderloin Salad

Ingredients:

  • 1 pound Pork tenderloin
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 cups Mixed salad greens
  • 2 medium Tomatoes
  • 1 large Cucumber
  • 0.5 Red onion
  • 0.5 cup Balsamic vinaigrette

Instructions:

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Rub the pork tenderloin with olive oil, salt, and black pepper.
  3. Place the pork tenderloin in a roasting pan and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145 degrees F (63 degrees C).
  4. While the pork is roasting, prepare the salad. In a large bowl, combine the salad greens, sliced tomatoes, sliced cucumber, and thinly sliced red onion.
  5. Remove the pork from the oven and let it rest for a few minutes. Then, slice it thin.
  6. Add the sliced pork to the salad. Drizzle the salad with balsamic vinaigrette.
  7. Toss the salad gently to combine, then serve.
