
Healthy American Pork Tenderloin Salad

Ingredients:
- 1 pound Pork tenderloin
- 1 tablespoon Olive oil
- 0.5 teaspoon Salt
- 0.5 teaspoon Black pepper
- 8 cups Mixed salad greens
- 2 medium Tomatoes
- 1 large Cucumber
- 0.5 Red onion
- 0.5 cup Balsamic vinaigrette
Instructions:
- Preheat the oven to 400 degrees F (200 degrees C).
- Rub the pork tenderloin with olive oil, salt, and black pepper.
- Place the pork tenderloin in a roasting pan and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145 degrees F (63 degrees C).
- While the pork is roasting, prepare the salad. In a large bowl, combine the salad greens, sliced tomatoes, sliced cucumber, and thinly sliced red onion.
- Remove the pork from the oven and let it rest for a few minutes. Then, slice it thin.
- Add the sliced pork to the salad. Drizzle the salad with balsamic vinaigrette.
- Toss the salad gently to combine, then serve.
