
Healthy American Eggs Benedict

Ingredients:
- 2 pieces Whole wheat English muffins
- 4 pieces Eggs
- 4 slices Canadian bacon
- 1 piece Avocado
- 1/2 cup Greek yogurt
- 1 tablespoon Lemon juice
- 1 pinch Paprika
- to taste Salt
- to taste Pepper
Instructions:
- Slice the avocado and set aside.
- Toast the whole wheat English muffins until they are golden brown.
- In a pan, cook the Canadian bacon until it is evenly browned. Place it on the toasted muffins.
- Poach the eggs and place them on top of the Canadian bacon.
- For the hollandaise sauce, mix together Greek yogurt, lemon juice, salt, pepper, and paprika.
- Drizzle the hollandaise sauce over the eggs and top with sliced avocado.
- Serve immediately.
