Healthy American Eggs Benedict

Ingredients:

  • 2 pieces Whole wheat English muffins
  • 4 pieces Eggs
  • 4 slices Canadian bacon
  • 1 piece Avocado
  • 1/2 cup Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 pinch Paprika
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Slice the avocado and set aside.
  2. Toast the whole wheat English muffins until they are golden brown.
  3. In a pan, cook the Canadian bacon until it is evenly browned. Place it on the toasted muffins.
  4. Poach the eggs and place them on top of the Canadian bacon.
  5. For the hollandaise sauce, mix together Greek yogurt, lemon juice, salt, pepper, and paprika.
  6. Drizzle the hollandaise sauce over the eggs and top with sliced avocado.
  7. Serve immediately.
