Ingredients:
- 8 Eggs
- 1 cup Low-fat milk
- 2 cups Whole grain bread crumbles
- 1 cup Chopped onions
- 1 cup Diced bell peppers
- 1.5 cups Shredded low-fat cheddar cheese
- 1 tsp Salt
- 0.5 tsp Black pepper
Instructions:
- Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- In a large bowl, beat the eggs and milk together until fully combined. Season with salt and pepper.
- Add the bread crumbs to the egg mixture and let them soak for about 5 minutes.
- Stir in the onions, bell peppers, and 1 cup of the cheese.
- Pour the mixture into the prepared baking dish and top with the remaining cheese.
- Bake for about 45 minutes, or until the casserole is set and the top is golden brown.
