Healthy American Beef Stir Fry
Servings: 4
Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
Ingredients:
- 500 grams Lean beef strips
- 4 cups Mixed vegetables (broccoli, bell peppers, carrots, snow peas)
- 2 pieces Garlic cloves
- 3 tablespoons Low-sodium soy sauce
- 2 tablespoons Honey
- 1/2 teaspoon Ground black pepper
- 2 tablespoons Olive oil
Instructions:
- Prepare all your ingredients: Dice the garlic, cut the beef into strips if not already prepped, chop the vegetables into bite-sized pieces.
- Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the beef strips and cook until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and add the garlic. Sauté until fragrant.
- Add the mixed vegetables, and stir fry for around 5-7 minutes, until they're tender-crisp.
- While the vegetables are cooking, mix together the soy sauce, honey, and black pepper in a small bowl.
- Return the beef to the skillet, then pour the sauce over the beef and vegetables. Toss well to combine and ensure everything is evenly coated.
- Allow the stir fry to cook for an additional 2-3 minutes, so that the sauce thickens a bit from the honey.
- Serve warm. This Healthy American Beef Stir Fry can be served as-is, or over brown rice or whole grains for an even more balanced meal.
