Healthy American Beef Stir Fry

Ingredients:

  • 500 grams Lean beef strips
  • 4 cups Mixed vegetables (broccoli, bell peppers, carrots, snow peas)
  • 2 pieces Garlic cloves
  • 3 tablespoons Low-sodium soy sauce
  • 2 tablespoons Honey
  • 1/2 teaspoon Ground black pepper
  • 2 tablespoons Olive oil

Instructions:

  1. Prepare all your ingredients: Dice the garlic, cut the beef into strips if not already prepped, chop the vegetables into bite-sized pieces.
  2. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the beef strips and cook until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil and add the garlic. Sauté until fragrant.
  4. Add the mixed vegetables, and stir fry for around 5-7 minutes, until they're tender-crisp.
  5. While the vegetables are cooking, mix together the soy sauce, honey, and black pepper in a small bowl.
  6. Return the beef to the skillet, then pour the sauce over the beef and vegetables. Toss well to combine and ensure everything is evenly coated.
  7. Allow the stir fry to cook for an additional 2-3 minutes, so that the sauce thickens a bit from the honey.
  8. Serve warm. This Healthy American Beef Stir Fry can be served as-is, or over brown rice or whole grains for an even more balanced meal.
