
Grilled Vegetable Caponata

Ingredients:
- 1 large Eggplant
- 1 large Red Bell Pepper
- 1 large Green Bell Pepper
- 1 medium Red Onion
- 4 medium Tomatoes
- 2 tablespoons Capers
- 1 tablespoon Olive Oil
- 1/4 cup Red Wine Vinegar
- to taste Salt
- to taste Freshly Ground Black Pepper
Instructions:
- Preheat the grill.
- Dice eggplant, peppers, onion, and tomatoes into large chunks.
- Toss vegetables in a bowl with olive oil, salt, and pepper.
- Grill the vegetables until they are charred and tender, then remove from the heat.
- Once cooled, chop vegetables into small pieces and mix in a bowl with capers and red wine vinegar.
- Let the mixture sit for at least 30 minutes to allow the flavors to meld.
- Serve with whole grain bread or over brown rice for a fulfilling lunch.
