Grilled Vegetable Caponata

Ingredients:

  • 1 large Eggplant
  • 1 large Red Bell Pepper
  • 1 large Green Bell Pepper
  • 1 medium Red Onion
  • 4 medium Tomatoes
  • 2 tablespoons Capers
  • 1 tablespoon Olive Oil
  • 1/4 cup Red Wine Vinegar
  • to taste Salt
  • to taste Freshly Ground Black Pepper

Instructions:

  1. Preheat the grill.
  2. Dice eggplant, peppers, onion, and tomatoes into large chunks.
  3. Toss vegetables in a bowl with olive oil, salt, and pepper.
  4. Grill the vegetables until they are charred and tender, then remove from the heat.
  5. Once cooled, chop vegetables into small pieces and mix in a bowl with capers and red wine vinegar.
  6. Let the mixture sit for at least 30 minutes to allow the flavors to meld.
  7. Serve with whole grain bread or over brown rice for a fulfilling lunch.
