Grilled Teriyaki Salmon

Ingredients:

  • 4 pieces Salmon fillets
  • 1/2 cup Teriyaki sauce
  • 1 teaspoon Grated fresh ginger
  • 2 cloves Minced garlic
  • 1 tablespoon Freshly squeezed lemon juice
  • 1 tablespoon Vegetable oil
  • to taste Salt and pepper
  • 4 cups Mixed salad greens
  • 1/2 cup Cherry tomatoes
  • 1 medium Cucumber
  • 2 tablespoons Rice wine vinegar

Instructions:

  1. Preheat grill on medium heat.
  2. Rinse salmon, pat dry, and season with salt and pepper. Set aside.
  3. In a small bowl, mix together the teriyaki sauce, garlic, ginger, lemon juice, and oil. Brush the salmon with half of this mixture.
  4. Place salmon on the preheated grill and cook for about 4-5 minutes per side or until the fish flakes easily with a fork.
  5. While the salmon is cooking, prepare the salad by combining salad greens, cherry tomatoes, and sliced cucumber. Drizzle with rice wine vinegar.
  6. Serve the grilled salmon over the salad and drizzle with the remaining teriyaki mixture. Enjoy your healthy Japanese lunch!
