
Grilled Teriyaki Salmon

Ingredients:
- 4 pieces Salmon fillets
- 1/2 cup Teriyaki sauce
- 1 teaspoon Grated fresh ginger
- 2 cloves Minced garlic
- 1 tablespoon Freshly squeezed lemon juice
- 1 tablespoon Vegetable oil
- to taste Salt and pepper
- 4 cups Mixed salad greens
- 1/2 cup Cherry tomatoes
- 1 medium Cucumber
- 2 tablespoons Rice wine vinegar
Instructions:
- Preheat grill on medium heat.
- Rinse salmon, pat dry, and season with salt and pepper. Set aside.
- In a small bowl, mix together the teriyaki sauce, garlic, ginger, lemon juice, and oil. Brush the salmon with half of this mixture.
- Place salmon on the preheated grill and cook for about 4-5 minutes per side or until the fish flakes easily with a fork.
- While the salmon is cooking, prepare the salad by combining salad greens, cherry tomatoes, and sliced cucumber. Drizzle with rice wine vinegar.
- Serve the grilled salmon over the salad and drizzle with the remaining teriyaki mixture. Enjoy your healthy Japanese lunch!
