Grilled Shrimp Salad

Ingredients:

  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 bag Mixed Leafy Greens
  • 2 medium sized Tomatoes
  • 1 medium sized Cucumber
  • 1/2 small sized Red onion
  • 1 bottle Honey Dijon dressing

Instructions:

  1. Preheat the grill on medium heat and oil the grate.
  2. In a bowl, mix the shrimp, olive oil, garlic powder, and onion powder.
  3. Lay the shrimp on the grill and cook each side for 2-3 minutes or until they are opaque.
  4. In a large bowl, mix the leafy greens, diced tomatoes, sliced cucumbers, and sliced red onions.
  5. Add the grilled shrimp to the salad mix.
  6. Drizzle the salad with honey Dijon dressing or serve it on the side.
  7. Toss the salad gently to mix all the ingredients.
