Grilled Salmon Breakfast Salad

Ingredients:

  • 4 piece fresh salmon fillets
  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 1 piece avocado
  • 1 piece red onion
  • 2 tablespoons olive oil
  • 1 piece lemon
  • to taste salt and pepper
  • 4 slices whole grain bread

Instructions:

  1. Preheat the grill to medium heat.
  2. Brush the salmon fillets with 1 tablespoon of olive oil and season with salt and pepper.
  3. Grill the salmon for about 4-5 minutes on each side or until cooked to your liking.
  4. While the salmon is cooking, prepare the salad. Cut the tomatoes in half, finely slice the red onion, and cube the avocado.
  5. In a large bowl, combine the mixed salad greens, tomatoes, avocado, and red onion.
  6. Make a dressing by squeezing the juice of the lemon into a small bowl. Whisk in the remaining olive oil, and season with salt and pepper.
  7. Toast the slices of whole grain bread.
  8. Once the salmon is done, gently flake apart the salmon and add it to the salad.
  9. Drizzle the dressing over the salad and toss gently to combine.
  10. Serve the salad with the toast on the side.
