
Grilled Salmon Breakfast Salad

Ingredients:
- 4 piece fresh salmon fillets
- 8 cups mixed salad greens
- 1 cup cherry tomatoes
- 1 piece avocado
- 1 piece red onion
- 2 tablespoons olive oil
- 1 piece lemon
- to taste salt and pepper
- 4 slices whole grain bread
Instructions:
- Preheat the grill to medium heat.
- Brush the salmon fillets with 1 tablespoon of olive oil and season with salt and pepper.
- Grill the salmon for about 4-5 minutes on each side or until cooked to your liking.
- While the salmon is cooking, prepare the salad. Cut the tomatoes in half, finely slice the red onion, and cube the avocado.
- In a large bowl, combine the mixed salad greens, tomatoes, avocado, and red onion.
- Make a dressing by squeezing the juice of the lemon into a small bowl. Whisk in the remaining olive oil, and season with salt and pepper.
- Toast the slices of whole grain bread.
- Once the salmon is done, gently flake apart the salmon and add it to the salad.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve the salad with the toast on the side.
