Grilled Chicken Salad

Ingredients:

  • 4 pieces Boneless chicken breasts
  • 8 cups Mixed salad greens
  • 2 pieces Tomatoes
  • 2 pieces Cucumbers
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for 6-7 minutes on each side, until cooked through.
  4. While the chicken is grilling, chop the tomatoes and cucumbers.
  5. In a large bowl, combine the salad greens, chopped tomatoes, and cucumbers.
  6. In a small bowl, whisk together the olive oil and lemon juice to make the dressing.
  7. Slice the grilled chicken and add it to the salad.
  8. Drizzle the dressing over the salad and toss to combine.
  9. Serve the salad immediately, with extra dressing on the side if desired.
