Ingredients:
- 4 pieces Boneless chicken breasts
- 8 cups Mixed salad greens
- 2 pieces Tomatoes
- 2 pieces Cucumbers
- 2 tablespoons Olive oil
- 1 tablespoon Lemon juice
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Instructions:
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, until cooked through.
- While the chicken is grilling, chop the tomatoes and cucumbers.
- In a large bowl, combine the salad greens, chopped tomatoes, and cucumbers.
- In a small bowl, whisk together the olive oil and lemon juice to make the dressing.
- Slice the grilled chicken and add it to the salad.
- Drizzle the dressing over the salad and toss to combine.
- Serve the salad immediately, with extra dressing on the side if desired.
