
Goan Shrimp Curry

Ingredients:
- 1 lb Shrimp, peeled and deveined
- 2 tbsp Coconut oil
- 1 medium-size Onion, diced
- 3 Garlic cloves, minced
- 2 medium-size Tomatoes, chopped
- 1 cup Coconut milk
- 1 tsp Turmeric
- 1 tsp Ground coriander
- 8 Curry leaves
- 2 tsp Tamarind paste
- 1 tsp Salt
- handful Cilantro, for garnish
- Cooked basmati rice, for serving
Instructions:
- Heat the coconut oil in a large pan over medium heat.
- Add the diced onion and minced garlic, sauté until the onions are translucent and the garlic is fragrant.
- Add the chopped tomatoes to the pan and cook until they begin to break down and form a sauce.
- Add the turmeric, ground coriander, curry leaves, and salt. Stir to combine and cook for another minute, just to bloom the spices.
- Add the coconut milk and tamarind paste to the pan. Bring the mixture up to a simmer.
- Once simmering, add the shrimp to the pan. Cook until the shrimp is pink and cooked through, about 3-4 minutes on each side.
- Serve the curry over a bed of cooked basmati rice, garnished with a handful of fresh cilantro.
