Goan Shrimp Curry

Ingredients:

  • 1 lb Shrimp, peeled and deveined
  • 2 tbsp Coconut oil
  • 1 medium-size Onion, diced
  • 3 Garlic cloves, minced
  • 2 medium-size Tomatoes, chopped
  • 1 cup Coconut milk
  • 1 tsp Turmeric
  • 1 tsp Ground coriander
  • 8 Curry leaves
  • 2 tsp Tamarind paste
  • 1 tsp Salt
  • handful Cilantro, for garnish
  • Cooked basmati rice, for serving

Instructions:

  1. Heat the coconut oil in a large pan over medium heat.
  2. Add the diced onion and minced garlic, sauté until the onions are translucent and the garlic is fragrant.
  3. Add the chopped tomatoes to the pan and cook until they begin to break down and form a sauce.
  4. Add the turmeric, ground coriander, curry leaves, and salt. Stir to combine and cook for another minute, just to bloom the spices.
  5. Add the coconut milk and tamarind paste to the pan. Bring the mixture up to a simmer.
  6. Once simmering, add the shrimp to the pan. Cook until the shrimp is pink and cooked through, about 3-4 minutes on each side.
  7. Serve the curry over a bed of cooked basmati rice, garnished with a handful of fresh cilantro.
