
Fruity Thai Breakfast Stir-Fry

Ingredients:
- 2 Cups Pineapple chunks
- 2 Whole Mango
- 1 Cup Cashew nuts
- 4 Stalks Green onions
- 250 Grams Tofu
- 2 Whole Garlic cloves
- 2 Tablespoons Coconut oil
- 2 Tablespoons Soy sauce
- 1 Teaspoon Chili flakes
Instructions:
- Start by cutting the mango and pineapple into bite-sized pieces.
- Dice the green onions and garlic.
- Add coconut oil to a large pan or wok and heat on a medium flame.
- Add the diced garlic and green onions to the pan and saute until fragrant.
- Add the cubed tofu to the pan, cooking until it's crispy and golden. Turn occasionally to ensure it's evenly cooked.
- Add the pineapple and mango chunks to the pan along with the cashew nuts. Cook for another 2 minutes.
- Mix in the soy sauce and chili flakes. Stir everything so it's well coated and cook for 1 more minute.
