Fruity Thai Breakfast Stir-Fry

Ingredients:

  • 2 Cups Pineapple chunks
  • 2 Whole Mango
  • 1 Cup Cashew nuts
  • 4 Stalks Green onions
  • 250 Grams Tofu
  • 2 Whole Garlic cloves
  • 2 Tablespoons Coconut oil
  • 2 Tablespoons Soy sauce
  • 1 Teaspoon Chili flakes

Instructions:

  1. Start by cutting the mango and pineapple into bite-sized pieces.
  2. Dice the green onions and garlic.
  3. Add coconut oil to a large pan or wok and heat on a medium flame.
  4. Add the diced garlic and green onions to the pan and saute until fragrant.
  5. Add the cubed tofu to the pan, cooking until it's crispy and golden. Turn occasionally to ensure it's evenly cooked.
  6. Add the pineapple and mango chunks to the pan along with the cashew nuts. Cook for another 2 minutes.
  7. Mix in the soy sauce and chili flakes. Stir everything so it's well coated and cook for 1 more minute.
