Fruity Mexican Tacos

Ingredients:

  • 2 ripe avocados
  • 1 ripe mangos
  • 1 small red onion
  • 1 bunch cilantro
  • 2 limes
  • 1 large garlic clove
  • 1 jalapeno pepper
  • 8 taco shells
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions:

  1. 1. Prepare the fruit salsa: Dice the avocados and mango. Finely chop the onion, cilantro and jalapeno pepper. Combine in a bowl.
  2. 2. Add the juice of one lime and finely chopped garlic to the fruit salsa. Season with salt and pepper to taste. Mix well and set aside.
  3. 3. Heat the oil in a pan over medium heat. Add the black beans and taco seasoning. Cook until heated through, about 5 minutes.
  4. 4. Warm the taco shells in the oven as per package instructions.
  5. 5. Assemble the tacos: add a spoonful of spiced black beans in each shell. Top with the fruit salsa.
  6. 6. Garnish with a squeeze of lime and extra cilantro leaves on top before serving.
