
Fruity Mexican Tacos

Ingredients:
- 2 ripe avocados
- 1 ripe mangos
- 1 small red onion
- 1 bunch cilantro
- 2 limes
- 1 large garlic clove
- 1 jalapeno pepper
- 8 taco shells
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 tablespoon olive oil
- to taste salt
- to taste pepper
Instructions:
- 1. Prepare the fruit salsa: Dice the avocados and mango. Finely chop the onion, cilantro and jalapeno pepper. Combine in a bowl.
- 2. Add the juice of one lime and finely chopped garlic to the fruit salsa. Season with salt and pepper to taste. Mix well and set aside.
- 3. Heat the oil in a pan over medium heat. Add the black beans and taco seasoning. Cook until heated through, about 5 minutes.
- 4. Warm the taco shells in the oven as per package instructions.
- 5. Assemble the tacos: add a spoonful of spiced black beans in each shell. Top with the fruit salsa.
- 6. Garnish with a squeeze of lime and extra cilantro leaves on top before serving.
