
Fruity Mediterranean Couscous Salad

Ingredients:
- 1 cup Couscous
- 2 tablespoons Olive oil
- 2 Lemons
- 1 cup Pitted olives
- 2 Tomatoes
- 1 Cucumber
- 1 cup Feta cheese
- 1/4 cup Fresh mint leaves
- 1/2 cup Olive oil
- to taste Salt and black pepper
Instructions:
- Cook the couscous as per the instructions on the package.
- In a large bowl, combine the couscous with olive oil.
- Chop the lemons, olives, tomatoes, cucumber and mint leaves. Add these to the couscous.
- Crumble the feta cheese over the salad.
- In a small bowl, whisk together the olive oil, juice of one lemon, salt, and pepper. Drizzle this mixture over the salad and toss to combine.
- Serve the salad chilled. Enjoy your delicious Mediterranean lunch!
