
Fruit Medley Couscous Salad

Ingredients:
- 1 cup Couscous
- 1 cup Water
- 1 tablespoon Olive oil
- 1 tbsp, juice Lemon
- 1 medium, diced Apple
- 1 medium, diced Orange
- 1 cup, diced Grapes
- 2 tbsp, chopped Mint leaves
- 100 g Feta cheese
- to taste Salt and Pepper
Instructions:
- 1. In a large pot, bring the water to a boil. Add couscous and olive oil, stir it once and cover the pot. Remove from heat and let it sit for 5 minutes or until the water is completely absorbed.
- 2. Once couscous is done, fluff it with a fork and set side to cool.
- 3. In a large bowl, combine diced apples, oranges, grapes, chopped mint leaves, and feta cheese. Add the cooled couscous and mix them well.
- 4. Add lemon juice, salt, and pepper for the dressing. Mix everything together until well combined.
- 5. The Salad is now ready to serve. You can enjoy it immediately or cover it and keep in the fridge for up to 2 days.
