Fruit Medley Couscous Salad

Ingredients:

  • 1 cup Couscous
  • 1 cup Water
  • 1 tablespoon Olive oil
  • 1 tbsp, juice Lemon
  • 1 medium, diced Apple
  • 1 medium, diced Orange
  • 1 cup, diced Grapes
  • 2 tbsp, chopped Mint leaves
  • 100 g Feta cheese
  • to taste Salt and Pepper

Instructions:

  1. 1. In a large pot, bring the water to a boil. Add couscous and olive oil, stir it once and cover the pot. Remove from heat and let it sit for 5 minutes or until the water is completely absorbed.
  2. 2. Once couscous is done, fluff it with a fork and set side to cool.
  3. 3. In a large bowl, combine diced apples, oranges, grapes, chopped mint leaves, and feta cheese. Add the cooled couscous and mix them well.
  4. 4. Add lemon juice, salt, and pepper for the dressing. Mix everything together until well combined.
  5. 5. The Salad is now ready to serve. You can enjoy it immediately or cover it and keep in the fridge for up to 2 days.
