Fruit Bruschetta

Ingredients:

  • 1 whole French baguette
  • 3 tbsp olive oil
  • 2 whole garlic clove
  • 2 large tomatoes
  • 10 whole basil leaves
  • 2 large peaches
  • 1 drizzle balsamic glaze
  • to taste salt and pepper

Instructions:

  1. Preheat your grill or a grill pan over medium heat.
  2. Slice the baguette diagonally into 1 inch thick slices.
  3. Brush both sides of the baguette slices with olive oil.
  4. Place the oiled slices on the grill, cook until toasted, about 2-3 minutes per side.
  5. Cut the garlic cloves in half and rub the cut sides on the toasted baguette slices.
  6. Cut the tomatoes and peaches into small dices, then sprinkle with salt and pepper.
  7. Basil leaves should be cut into thin stripes.
  8. Combine the diced tomatoes, peaches, and basil in a bowl, then heap the mixture onto the baguette slices.
  9. Finish off with a drizzle of balsamic glaze and serve immediately for best taste.
