Fruit Biryani Indian Dinner

Ingredients:
- 2 cups Basmati rice
- 4 cups Water
- 3 cups Assorted fruits (apples, grapes, pineapples, pomegranate)
- 2 medium, sliced Onions
- 2 Green chilis
- 4 pods Cardamom
- 1 Cinnamon stick
- 2 Star anise
- 4 Cloves
- 1 teaspoon Turmeric powder
- 10 leaves Curry leaves
- 3 tablespoons Coconut oil
- to taste Salt
Instructions:
- Rinse the rice thoroughly under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
- In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice to the boiling water. Cook the rice until it's 70% done, then drain the water and set the rice aside.
- While the rice is cooking, prep the fruits. Wash all the fruits, and cut into bite-sized pieces.
- In a large pan, heat the coconut oil over medium heat. Add the cardamom, cinnamon, star anise, and cloves. Fry for a minute until fragrant.
- Add the sliced onions and green chilis to the pan. Sauté until the onions are golden brown.
- Add the turmeric powder and curry leaves to the pan, stir well to combine.
- Add the prepped fruits to the pan and mix well. Cook for 5 minutes, then season with salt.
- Layer the partially cooked rice over the fruit mixture in the pan. Lower the heat to low, cover the pan with a lid and let it cook for 10-15 minutes until the rice is fully cooked and has absorbed the flavors of the fruits and spices.
- Remove from the heat and let it sit for 10 minutes before serving. Serve your fruit biryani with raita or a side salad.
