  • 1 Cinnamon stick
  • 2 Star anise
  • 4 Cloves
  • 1 teaspoon Turmeric powder
  • 10 leaves Curry leaves
  • 3 tablespoons Coconut oil
  • to taste Salt

Instructions:

  1. Rinse the rice thoroughly under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice to the boiling water. Cook the rice until it's 70% done, then drain the water and set the rice aside.
  3. While the rice is cooking, prep the fruits. Wash all the fruits, and cut into bite-sized pieces.
  4. In a large pan, heat the coconut oil over medium heat. Add the cardamom, cinnamon, star anise, and cloves. Fry for a minute until fragrant.
  5. Add the sliced onions and green chilis to the pan. Sauté until the onions are golden brown.
  6. Add the turmeric powder and curry leaves to the pan, stir well to combine.
  7. Add the prepped fruits to the pan and mix well. Cook for 5 minutes, then season with salt.
  8. Layer the partially cooked rice over the fruit mixture in the pan. Lower the heat to low, cover the pan with a lid and let it cook for 10-15 minutes until the rice is fully cooked and has absorbed the flavors of the fruits and spices.
  9. Remove from the heat and let it sit for 10 minutes before serving. Serve your fruit biryani with raita or a side salad.
