French-Styled Pork Cassoulet

Ingredients:
- 2 cups diced pork shoulder
- 2 stalks celery
- 2 medium carrots
- 1 large onion
- 4 whole garlic cloves
- 2 cups white northern beans
- 3 cups chicken broth
- 3 tablespoons tomato paste
- 1 teaspoon thyme
- 1 sprig rosemary
- to taste salt and pepper
- 2 tablespoons olive oil
- 1 cup breadcrumbs
Instructions:
- Preheat your oven to 350 degrees F.
- In a large ovenproof pot, heat the olive oil over medium heat. Add the diced pork and cook until browned on all sides. Remove from the pot and set aside.
- Add the onions, celery, and carrots to the pot. Cook until softened.
- Add the garlic and cook for another minute.
- Stir in the tomato paste, then add the beans, thyme, rosemary, and chicken broth. Season with salt and pepper.
- Add the pork back into the pot, then sprinkle the top with breadcrumbs.
- Cover the pot and bake in the oven for around 3 hours, or until the pork is tender and the flavors have melded together.
