French-Styled Pork Cassoulet

Ingredients:

  • 2 cups diced pork shoulder
  • 2 stalks celery
  • 2 medium carrots
  • 1 large onion
  • 4 whole garlic cloves
  • 2 cups white northern beans
  • 3 cups chicken broth
  • 3 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 sprig rosemary
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 1 cup breadcrumbs

Instructions:

  1. Preheat your oven to 350 degrees F.
  2. In a large ovenproof pot, heat the olive oil over medium heat. Add the diced pork and cook until browned on all sides. Remove from the pot and set aside.
  3. Add the onions, celery, and carrots to the pot. Cook until softened.
  4. Add the garlic and cook for another minute.
  5. Stir in the tomato paste, then add the beans, thyme, rosemary, and chicken broth. Season with salt and pepper.
  6. Add the pork back into the pot, then sprinkle the top with breadcrumbs.
  7. Cover the pot and bake in the oven for around 3 hours, or until the pork is tender and the flavors have melded together.
