
French Style Vegetable Rice Pilaf

Ingredients:
- 1 cup Long-grain white rice
- 2 tablespoons Olive oil
- 1 medium size Onions, finely chopped
- 2 cloves Garlic, finely chopped
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 2 cups Chicken stock
- to taste Salt
- to taste Pepper
- 1/2 teaspoon Thyme
- 1 tablespoon Parsley, finely chopped
Instructions:
- Heat the olive oil in a large saucepan over medium heat. Add the onions and sauté until they become translucent.
- Add the garlic and sauté until it becomes fragrant.
- Add the carrots and celery. Stir and cook for 5 minutes until they begin to soften.
- Add the rice and stir to mix everything together. Cook for 2 minutes.
- Pour in the chicken stock, add thyme, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat, cover the pan and let it simmer for 20 minutes, or until the rice is cooked and the liquid has been absorbed.
- Remove from heat, fluff the rice with a fork, and add chopped parsley. Stir to combine.
- Serve the vegetable rice pilaf warm.
