French Style Vegetable Rice Pilaf

Ingredients:

  • 1 cup Long-grain white rice
  • 2 tablespoons Olive oil
  • 1 medium size Onions, finely chopped
  • 2 cloves Garlic, finely chopped
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 2 cups Chicken stock
  • to taste Salt
  • to taste Pepper
  • 1/2 teaspoon Thyme
  • 1 tablespoon Parsley, finely chopped

Instructions:

  1. Heat the olive oil in a large saucepan over medium heat. Add the onions and sauté until they become translucent.
  2. Add the garlic and sauté until it becomes fragrant.
  3. Add the carrots and celery. Stir and cook for 5 minutes until they begin to soften.
  4. Add the rice and stir to mix everything together. Cook for 2 minutes.
  5. Pour in the chicken stock, add thyme, salt, and pepper. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat, cover the pan and let it simmer for 20 minutes, or until the rice is cooked and the liquid has been absorbed.
  7. Remove from heat, fluff the rice with a fork, and add chopped parsley. Stir to combine.
  8. Serve the vegetable rice pilaf warm.
