French Style Omelette

Ingredients:

  • 4 large Eggs
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • Handful chopped Fresh herbs (chives, parsley, tarragon)
  • 0.5 cup Gruyère Cheese

Instructions:

  1. Beat eggs in a bowl until blended, add salt and pepper.
  2. Heat butter in a non-stick frying pan over medium-high heat until hot.
  3. Pour in egg mixture. As eggs start to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds.
  4. Continue cooking — pulling, lifting and folding eggs — until thickened and no visible liquid egg remains. Do not stir constantly.
  5. Sprinkle the cheese evenly on one side of the omelet, then fold the omelet in half with the turner to cover the cheese.
  6. Remove from heat and let the omelet stand for a few minutes to allow the cheese to melt.
  7. Lastly, garnish the omelet with the fresh herbs before serving.
