French Style Healthy Fish Omelette

Ingredients:

  • 4 none Eggs
  • 1 tablespoon Olive Oil
  • 200 grams White Fish Fillet
  • 2 none Spring Onions
  • 1 bunch Fresh Parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 1 tablespoon Lemon Juice

Instructions:

  1. First, carefully gut and chop the fish fillet into small, bite-sized pieces.
  2. In a non-stick pan, heat the olive oil over medium heat, then add the fish pieces. Cook until just white through, about 2-3 minutes.
  3. While the fish is cooking, slice the spring onions and roughly chop the parsley. Set aside.
  4. In a bowl, crack the eggs and whisk together with the salt, pepper and lemon juice.
  5. Once the fish is cooked, remove it from the pan but keep the heat on.
  6. Pour the whisked eggs into the hot pan and let them start to set.
  7. When the eggs are about halfway cooked, sprinkle the cooked fish, spring onions and parsley on top.
  8. Continue cooking the omelette until the eggs are set to your preference.
  9. Slide the omelette onto a plate, fold into half and serve while hot.
