
French Style Healthy Fish Omelette

Ingredients:
- 4 none Eggs
- 1 tablespoon Olive Oil
- 200 grams White Fish Fillet
- 2 none Spring Onions
- 1 bunch Fresh Parsley
- 0.5 teaspoon Salt
- 0.25 teaspoon Pepper
- 1 tablespoon Lemon Juice
Instructions:
- First, carefully gut and chop the fish fillet into small, bite-sized pieces.
- In a non-stick pan, heat the olive oil over medium heat, then add the fish pieces. Cook until just white through, about 2-3 minutes.
- While the fish is cooking, slice the spring onions and roughly chop the parsley. Set aside.
- In a bowl, crack the eggs and whisk together with the salt, pepper and lemon juice.
- Once the fish is cooked, remove it from the pan but keep the heat on.
- Pour the whisked eggs into the hot pan and let them start to set.
- When the eggs are about halfway cooked, sprinkle the cooked fish, spring onions and parsley on top.
- Continue cooking the omelette until the eggs are set to your preference.
- Slide the omelette onto a plate, fold into half and serve while hot.
