French Style Healthy Egg Muffins

Ingredients:

  • 6 whole Eggs
  • 1/4 cup Low-fat Milk
  • 1 cup Chopped mixed vegetables (e.g. bell peppers, spinach, onions)
  • 1 cup Cheese, grated (preferably low-fat)
  • 1 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a muffin tin with a little olive oil to prevent sticking.
  2. Beat the eggs in a large bowl, and add milk. Whisk till well combined.
  3. Add salt, pepper, and chopped vegetables to the egg mixture and mix well.
  4. Pour the mixture into the greased muffin tin, filling each slot only up to 3/4th.
  5. Sprinkle a generous amount of cheese on top of each one.
  6. Bake in the preheated oven for about 20-25 minutes, or until the eggs are set and the top is golden brown.
  7. Let it cool for a while before serving. These French-style healthy egg muffins can be enjoyed as a light snack or a breakfast item. They are filling, healthy, and incredibly delicious.
