
French Style Healthy Egg Muffins

Ingredients:
- 6 whole Eggs
- 1/4 cup Low-fat Milk
- 1 cup Chopped mixed vegetables (e.g. bell peppers, spinach, onions)
- 1 cup Cheese, grated (preferably low-fat)
- 1 tbsp Olive oil
- to taste Salt
- to taste Pepper
Instructions:
- Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a muffin tin with a little olive oil to prevent sticking.
- Beat the eggs in a large bowl, and add milk. Whisk till well combined.
- Add salt, pepper, and chopped vegetables to the egg mixture and mix well.
- Pour the mixture into the greased muffin tin, filling each slot only up to 3/4th.
- Sprinkle a generous amount of cheese on top of each one.
- Bake in the preheated oven for about 20-25 minutes, or until the eggs are set and the top is golden brown.
- Let it cool for a while before serving. These French-style healthy egg muffins can be enjoyed as a light snack or a breakfast item. They are filling, healthy, and incredibly delicious.
