French Style Breakfast Risotto

Ingredients:

  • 0.5 cup Arborio rice
  • 2 cups Water
  • 2 Tablespoons Butter
  • 0.5 cup, diced White onion
  • to taste Salt
  • to taste Pepper
  • 0.25 cup, grated Parmesan cheese
  • for garnish Fresh parsley

Instructions:

  1. In a saucepan, bring the water to a boil.
  2. In a separate pan, melt the butter over medium heat and sauté the diced onions until they are translucent.
  3. Stir the Arborio rice into the pan with the onions and cook for 2-3 minutes, until the rice starts to turn golden.
  4. Slowly pour the boiling water into the pan with the rice and onions, stirring constantly.
  5. Reduce the heat to low and cover the pan. Let the rice simmer for 15-20 minutes, until it is tender and has absorbed most of the water.
  6. Stir in the grated Parmesan cheese and season the risotto with salt and pepper according to your taste.
  7. Serve the breakfast risotto hot, garnished with fresh parsley.
