French Seafood Crepes

Ingredients:

  • 1 cup Milk
  • 1 cup Flour
  • 2 pieces Eggs
  • 2 tablespoons Butter
  • 1 pinch Salt
  • 1 cup Cooked Shrimp
  • 4 slices Smoked Salmon
  • 1 cup Heavy Cream
  • 1 clove Garlic
  • 1 bunch Chives

Instructions:

  1. Combine the milk, flour, eggs, 1 tablespoon of the butter, and a pinch of salt in a blender and blend until smooth.
  2. Let the batter rest for at least five minutes.
  3. While batter is resting, prepare the filling. In a skillet, melt the remaining butter over medium heat.
  4. Add the garlic and cook until fragrant, then add the cooked shrimp and smoked salmon.
  5. Stir in the heavy cream and let the mixture simmer until the seafood is heated through.
  6. Heat a nonstick crepe pan or large skillet over medium heat. Pour about 1/4 cup of the batter into the pan, tilting to coat the bottom.
  7. Cook until the crepe is lightly golden on the bottom, about 2 minutes, then flip and cook for an additional minute.
  8. Place a spoonful of the seafood mixture in the center of the crepe, fold the sides over the filling, and serve garnished with chopped chives.
