
French Seafood Crepes

Ingredients:
- 1 cup Milk
- 1 cup Flour
- 2 pieces Eggs
- 2 tablespoons Butter
- 1 pinch Salt
- 1 cup Cooked Shrimp
- 4 slices Smoked Salmon
- 1 cup Heavy Cream
- 1 clove Garlic
- 1 bunch Chives
Instructions:
- Combine the milk, flour, eggs, 1 tablespoon of the butter, and a pinch of salt in a blender and blend until smooth.
- Let the batter rest for at least five minutes.
- While batter is resting, prepare the filling. In a skillet, melt the remaining butter over medium heat.
- Add the garlic and cook until fragrant, then add the cooked shrimp and smoked salmon.
- Stir in the heavy cream and let the mixture simmer until the seafood is heated through.
- Heat a nonstick crepe pan or large skillet over medium heat. Pour about 1/4 cup of the batter into the pan, tilting to coat the bottom.
- Cook until the crepe is lightly golden on the bottom, about 2 minutes, then flip and cook for an additional minute.
- Place a spoonful of the seafood mixture in the center of the crepe, fold the sides over the filling, and serve garnished with chopped chives.
