French Seafood Bouillabaisse

Ingredients:

  • 2 tablespoons Olive oil
  • 2 medium Onions, chopped
  • 4 Garlic cloves, minced
  • 4 large Tomatoes, peeled and chopped
  • 1 quart Fish stock
  • 1 pinch Saffron threads
  • 1 tablespoon Orange zest
  • 2 Bay leaves
  • 4 pounds Assorted seafood (shrimp, flounder, clams, mussels)
  • to taste Salt
  • to taste Black pepper
  • 1 loaf Baguette, sliced

Instructions:

  1. 1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and cook until they become translucent.
  2. 2. Stir in the chopped tomatoes, fish stock, saffron, orange zest, and bay leaves. Bring this mixture to a boil.
  3. 3. Decrease the heat and let it simmer for 20 minutes.
  4. 4. Add the assorted seafood, and season with salt and black pepper. Stir well, ensuring that all the seafood is immersed in the broth. Cover and simmer this for 15-20 minutes, or until the seafood is cooked.
  5. 5. Serve with slices of baguette, which can be used to soak up the flavorful broth.
