French Seafood Bouillabaisse

Ingredients:
- 2 tablespoons Olive oil
- 2 medium Onions, chopped
- 4 Garlic cloves, minced
- 4 large Tomatoes, peeled and chopped
- 1 quart Fish stock
- 1 pinch Saffron threads
- 1 tablespoon Orange zest
- 2 Bay leaves
- 4 pounds Assorted seafood (shrimp, flounder, clams, mussels)
- to taste Salt
- to taste Black pepper
- 1 loaf Baguette, sliced
Instructions:
- 1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and cook until they become translucent.
- 2. Stir in the chopped tomatoes, fish stock, saffron, orange zest, and bay leaves. Bring this mixture to a boil.
- 3. Decrease the heat and let it simmer for 20 minutes.
- 4. Add the assorted seafood, and season with salt and black pepper. Stir well, ensuring that all the seafood is immersed in the broth. Cover and simmer this for 15-20 minutes, or until the seafood is cooked.
- 5. Serve with slices of baguette, which can be used to soak up the flavorful broth.
