
French Scrambled Eggs

Ingredients:
- 8 unit Eggs
- 2 tablespoons Unsalted butter
- 1/4 cup Heavy cream
- 1/4 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 tablespoons Chopped fresh chives
Instructions:
- Crack the eggs into a mixing bowl and beat them until they turn a pale yellow color.
- Heat a heavy-bottomed non-stick sauté pan over medium-low heat. Add the butter and let it melt.
- Add the beaten eggs to the pan and allow them to cook slowly. If the eggs start to cook too quickly, remove the pan from the heat and let it cool slightly, while continuing to stir the eggs.
- Once the eggs begin to thicken, add the cream, salt and pepper. Continue stirring the eggs until they are creamy and slightly runny; the eggs will continue to set after they are removed from the heat.
- Serve the eggs immediately, sprinkled with fresh chives.
